Description

Pepsin is synthesized in the gastric mucosa and secreted into the stomach as a zymogen, pepsinogen, which contains an extra 44 residue propeptide at the N-terminus. The residues of the propeptides of pepsinogen and other aspartic protease zymogens are conventionally numbered separately from the enzymes with a ‘p’ suffix. Unlike pepsin, pepsinogen is stable in neutral and alkaline solutions. Upon meeting the acidic milieu of the stomach, pepsinogen is converted to pepsin with the removal of the propeptide.
